Ingredients

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 1 cup cheddar cheese, shredded
  • 0.5 cup sour cream
  • 4 strips bacon, cooked and crumbled
  • 2 tablespoons green onions, chopped

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into bite-sized florets and spread them out on the prepared baking sheet.

Step 3

Drizzle the olive oil over the cauliflower and sprinkle with sea salt and black pepper. Toss to coat evenly.

Step 4

Roast the cauliflower in the preheated oven for 20-25 minutes, or until tender and golden brown, stirring halfway through.

Step 5

While the cauliflower is roasting, prepare the toppings. In a bowl, mix together the shredded cheddar cheese, sour cream, crumbled bacon, and chopped green onions.

Step 6

Once the cauliflower is roasted, remove from the oven and let cool slightly.

Step 7

Transfer the roasted cauliflower to a serving dish. Top with the cheese mixture.

Step 8

Return the dish to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 9

Garnish with extra crumbled bacon and chopped green onions, if desired, before serving.
