Ingredients

  • 100 grams Coconut flour
  • 2 tablespoons Psyllium husk
  • 4 tablespoons Ghee
  • 1 teaspoon Salt
  • 1 teaspoon Carom seeds (ajwain)
  • 1 teaspoon Baking powder
  • 120 milliliters Water
  • 1 large Eggplant
  • 2 medium Tomatoes
  • 1 small Green chili
  • 1 inch piece Ginger
  • 1 tablespoon Mustard oil
  • 1 small Onion
  • 2 tablespoons Fresh coriander leaves
  • 0.5 teaspoon Black salt
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

In a mixing bowl, combine coconut flour, psyllium husk, salt, carom seeds, and baking powder.

Step 3

Add melted ghee to the dry mixture and rub it thoroughly to get a crumbly texture.

Step 4

Gradually add water to form a soft dough. If the dough feels dry, add a little additional water.

Step 5

Divide the dough into 8 equal parts, roll them into smooth balls, and slightly flatten them.

Place the littis on a baking tray lined with parchment paper.

Bake littis in the preheated oven for 30-35 minutes until golden brown, turning them halfway through.

Meanwhile, roast the eggplant and tomatoes directly on a gas flame or under the grill until the skins are charred, and the inside is soft. Peel the charred skin off.
