Preheat your oven to 200°C (390°F).
In a mixing bowl, combine coconut flour, psyllium husk, salt, carom seeds, and baking powder.
Add melted ghee to the dry mixture and rub it thoroughly to get a crumbly texture.
Gradually add water to form a soft dough. If the dough feels dry, add a little additional water.
Divide the dough into 8 equal parts, roll them into smooth balls, and slightly flatten them.
Place the littis on a baking tray lined with parchment paper.
Bake littis in the preheated oven for 30-35 minutes until golden brown, turning them halfway through.
Meanwhile, roast the eggplant and tomatoes directly on a gas flame or under the grill until the skins are charred, and the inside is soft. Peel the charred skin off.
Mash the roasted eggplant and tomatoes together in a bowl.
Finely chop green chili and ginger, then add them to the mashed vegetables.
In a small pan, heat mustard oil and fry the chopped onion until golden brown.
Add the fried onions to the mashed vegetable mix along with black salt and lemon juice.
Garnish the choka with chopped fresh coriander leaves.
Serve the low carb littis hot with the freshly made choka.
