Ingredients

  • 240 ml Heavy cream
  • 60 ml Lemon juice
  • 50 grams Powdered erythritol (or any low-carb sweetener)
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 10 grams Gelatin powder
  • 2 tablespoons Water (for blooming gelatin)

Directions

Step 1

In a small bowl, sprinkle the gelatin powder over 2 tablespoons of water. Set it aside to bloom for about 5 minutes.

Step 2

In a medium saucepan over low heat, combine the lemon juice, lemon zest, and powdered erythritol. Stir until the sweetener has fully dissolved. Remove from heat.

Add the bloomed gelatin to the warm lemon mixture and stir until it is fully dissolved. Let the mixture cool slightly.
