Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine almond flour, baking powder, xanthan gum, and salt.
In a microwave-safe bowl, mix the shredded mozzarella and cream cheese. Microwave on high in 30-second intervals until melted and combined, stirring in between each interval.
Add the cheese mixture to the dry ingredients along with two beaten eggs. Mix well until a dough forms. Knead with hands if necessary to fully combine.
