Ingredients

  • 3 medium Zucchini
  • 1 cup Ricotta cheese
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 1 large Egg
  • 1 cup Spinach, fresh
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup Marinara sauce
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Using a mandoline or vegetable peeler, slice the zucchini lengthwise into thin strips about 1/8 inch thick. You will need at least 12 strips.

Step 3

In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add fresh spinach to the pan and cook for 2-3 minutes until wilted. Remove from heat and let it cool slightly.
