  • 500 grams lamb shoulder
  • 60 ml olive oil
  • 30 ml lemon juice

  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 large cos or romaine lettuce leaves
  • 1 medium cucumber
  • 0.5 medium red onion
  • 12 pieces cherry tomatoes
  • 100 grams tzatziki sauce
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the lamb shoulder into 2.5 cm (1 inch) cubes and place them in a large mixing bowl.

Step 2

Make the marinade by whisking together the olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper.

Pour the marinade over the lamb pieces, ensuring they are all well coated. Cover the bowl and let the lamb marinate in the refrigerator for at least 30 minutes, or overnight for best results.
