  • 500 grams beef tenderloin
  • 3 large zucchini
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium carrot
  • 1 large onion
  • 3 pieces garlic cloves
  • 2 tablespoons tomato paste
  • 3 tablespoons soy sauce
  • 1.5 liters beef broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 tablespoons olive oil

Directions

Step 1

Trim excess fat from the beef tenderloin and cut it into thin strips.

Step 2

Spiralize the zucchinis to create noodle-like strands. Set aside.

Step 3

Slice the bell peppers into strips, peel and julienne the carrot, and thinly slice the onion.

Step 4

Mince the garlic cloves.

Heat olive oil in a large pot over medium-high heat. Add the beef strips and cook until they are browned on all sides, about 5-7 minutes.
