Ingredients

  • 2 cups Almond flour
  • 2 cups Mozzarella cheese, shredded
  • 1 cup Butter, melted
  • 1 cup Sweetener (granulated erythritol or similar)
  • 1 cup Heavy cream
  • 1 tablespoon Rose water
  • 1 tablespoon Orange blossom water
  • 0.5 cup Pistachios, chopped
  • 0.5 cup Water
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a round baking dish (approximately 10 inches in diameter) with a bit of butter.

Step 2

In a medium saucepan over low heat, combine the mozzarella cheese and half of the butter, stirring until the cheese is fully melted and combined with the butter.

Step 3

Mix the almond flour into the cheese and butter mixture, stirring until it forms a dough-like consistency.

Step 4

Press half of the dough mixture into the bottom of the prepared baking dish to form an even base layer.

Step 5

In a separate saucepan over medium heat, combine the sweetener, water, rose water, orange blossom water, and salt. Stir occasionally until the sweetener dissolves completely, and the syrup thickens slightly. Remove from heat and set aside.

Pour the heavy cream over the base layer in the dish, spreading it evenly.

Cover the cream layer with the remaining dough mixture, pressing gently to form an even top layer.
