Ingredients

  • 1 medium head Green cabbage
  • 1 teaspoon Carraway seeds
  • 1 teaspoon Salt
  • 6 tablespoons Apple cider vinegar
  • 3 tablespoons Olive oil
  • 2 teaspoons Sugar substitute (like stevia or erythritol)
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 stalks Green onions, chopped

Directions

Step 1

Remove the outer leaves of the cabbage, then rinse under cold water.

Step 2

Cut the cabbage in half, remove the core, and then slice the cabbage into thin strips using a sharp knife or a mandoline.

Step 3

Place the sliced cabbage into a large bowl and add the salt. Toss well to ensure the salt is evenly distributed.

Step 4

Let the salted cabbage sit for 10-15 minutes. This will help soften it and release some of the moisture.

Step 5

Meanwhile, in a small bowl, combine the apple cider vinegar, olive oil, sugar substitute, caraway seeds, and black pepper. Whisk until the sugar substitute is dissolved and the dressing is well combined.

Step 6

Gently squeeze the cabbage to remove any excess water and drain well. Return the cabbage to the large bowl.

Step 7

Add the dressing to the drained cabbage and toss everything together until well coated.

Step 8

Fold in the chopped parsley and green onions, mixing well.

Step 9

Taste and adjust seasoning if necessary with a little more salt, pepper, or sugar substitute according to your preference.

Step 10

Let the Krautsalat sit in the fridge for at least an hour before serving to allow the flavors to meld together. Serve chilled.
