Preheat the oven to 200°C (392°F) and line a muffin tin with paper liners.
In a large mixing bowl, combine almond flour, coconut flour, erythritol, xanthan gum, baking powder, and salt.
Cut the cold butter into small cubes and add it to the dry ingredients. Using your fingers or a pastry cutter, blend until the mixture resembles coarse crumbs.
