Ingredients

  • 500 grams Ground beef (preferably fatty, around 80% lean)
  • 250 grams Ground lamb
  • 1 unit Large onion, grated
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 2 tablespoons Chopped fresh parsley
  • 1 unit Egg
  • 2 tablespoons Olive oil
  • 1 unit Lemon wedges, for serving

Directions

Step 1

In a large bowl, combine the ground beef and ground lamb. Mix thoroughly to combine the meats evenly.

Step 2

Add the grated onion and minced garlic to the meat mixture. Mix well using your hands or a spatula until fully integrated.

Step 3

Sprinkle in the salt, black pepper, turmeric powder, paprika, and ground cumin. Continue mixing until the spices are evenly distributed throughout the meat.

Step 4

Add the chopped parsley and crack in the egg. Mix again to bind all the ingredients together. The egg will help the meat hold its shape during cooking.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to firm up.

Step 6

Preheat your grill to medium-high heat and lightly brush the grates with olive oil to prevent sticking.

Step 7

Divide the meat mixture into 8 equal portions. With damp hands to prevent sticking, mold each portion around a skewer, shaping them into long cylinders about 1 inch in diameter.

Step 8

Once the grill is ready, place the skewers on the grill. Cook for about 6-8 minutes per side, turning them once or twice, until the kebabs are fully cooked and have charred lines.

Step 9

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 10

Serve the koobideh hot with lemon wedges on the side for added zest.
