Ingredients

  • 1.5 cups Almond flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Water
  • 2 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.

In a separate bowl, beat the eggs then add water and olive oil. Whisk together until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and mix until a dough forms. Let it rest for about 5 minutes to allow the psyllium husk to absorb the moisture.

Divide the dough into 8 equal portions and roll each portion into a ball.

Place a ball of dough between two pieces of parchment paper and roll it out with a rolling pin until it's about 6 inches in diameter.

Heat a non-stick skillet over medium heat. Once hot, carefully peel the top parchment paper off and place the tortilla into the skillet, peeling the bottom piece of paper away.
