Ingredients

  • 1.5 cups Almond flour
  • 1 large Egg
  • 2 cups Mozzarella cheese
  • 2 tablespoons Cream cheese
  • 1 cup Minced lamb or beef
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Salt
  • 0.5 cup Tomato sauce
  • 0.5 small, sliced Red onion
  • 1 small, diced Tomato
  • 2 tablespoons, chopped Fresh parsley
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a microwave-safe bowl, combine 2 cups of mozzarella and 2 tablespoons of cream cheese. Microwave in 30-second intervals until melted and smooth.

Step 3

Mix 1 egg and 1.5 cups of almond flour into the cheese mixture until a dough forms.

Step 4

Place the dough between two sheets of parchment paper and roll it out to about 10-12 inches in diameter for the pizza crust.

Step 5

Remove the top parchment paper and place the crust on a pizza stone or baking sheet. Bake for 10 minutes or until lightly browned.

Step 6

In a skillet over medium heat, add 1 tablespoon of olive oil and cook 1 cup of minced lamb or beef until browned. Season with 1 teaspoon each of garlic powder, onion powder, ground cumin, ground coriander, and 0.5 teaspoon of salt. Set aside.

Spread 0.5 cup of tomato sauce evenly over the pre-baked pizza crust.

Distribute the cooked minced meat evenly on top of the sauce.

Sprinkle 0.5 small, sliced red onion and 1 small, diced tomato over the meat.

Optionally, sprinkle a little more mozzarella cheese on top if desired.

Step 11

Bake the pizza for an additional 8-10 minutes, or until the cheese has melted and the toppings are heated through.

Step 12

Remove from the oven, and sprinkle with 2 tablespoons of fresh, chopped parsley.

Step 13

Allow to cool for a couple of minutes before slicing and serving.
