Ingredients

  • 2 medium Turnips
  • 1 head Cauliflower
  • 6 slices Bacon
  • 0.5 medium Onion
  • 0.25 cup Apple cider vinegar
  • 0.25 cup Olive oil
  • 1 tablespoon Dijon mustard
  • 0.5 cup Chicken broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives

Directions

Step 1

Peel and cube the turnips into 1/2-inch pieces. Cut the cauliflower into small florets.

Step 2

Fill a large pot with water and bring it to a boil. Add the cubed turnips and boil for 10 minutes. After 5 minutes, add the cauliflower florets. Boil until both are tender but not mushy.

Step 3

While the turnips and cauliflower are cooking, chop the bacon into 1/2-inch pieces. Cook the bacon in a skillet over medium heat until crisp. Remove the bacon from the skillet and set aside on a paper towel-lined plate.

Step 4

Keep about 2 tablespoons of the bacon drippings in the skillet and add the finely chopped onion. Sauté for about 3-4 minutes until the onion is soft and translucent.
