Ingredients

  • 1 medium head Cauliflower
  • 1 cup Heavy cream
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves
  • 1 cup, grated Gruyère cheese
  • 0.5 cup, grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 teaspoon, chopped Fresh thyme

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the cauliflower into small florets. Steam them for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

Step 3

In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Step 4

Stir in the heavy cream, salt, black pepper, and nutmeg. Bring to a gentle simmer and allow the flavors to infuse for about 3-4 minutes.

Step 5

Remove the saucepan from heat and stir in half of the Gruyère cheese until melted and well combined.

Step 6

In a baking dish, layer the cauliflower florets evenly. Pour the cream mixture over the top, ensuring the cauliflower is well coated.

Step 7

Sprinkle the remaining Gruyère cheese and Parmesan cheese evenly over the top of the cauliflower.

Step 8

Bake in the preheated oven for 30 minutes, or until the top is golden brown and bubbly.

Step 9

Remove from the oven and let it cool for a few minutes. Sprinkle with fresh thyme before serving.

Step 10

Serve warm and enjoy your low-carb Kartoffelgratin!
