  • 200 grams Cashew nuts
  • 50 grams Powdered erythritol
  • 60 ml Full-fat coconut milk
  • 1 teaspoon Ghee (clarified butter)
  • 1 teaspoon Cardamom powder
  • 2 sheets Silver leaf (optional, for decoration)

Directions

Step 1

Begin by roasting the cashew nuts in a pan over low heat for about 3-4 minutes until slightly golden and fragrant. Be careful not to burn them.

Step 2

Allow the roasted cashew nuts to cool completely. Once cooled, transfer them to a blender or food processor and grind them into a fine powder. Do not over-blend as it might release the oils, turning them into a paste.

Step 3

In a non-stick pan, add the powdered erythritol and coconut milk. Stir well to combine.

Step 4

Place the pan on medium heat and continue stirring until the erythritol dissolves completely and the mixture starts to thicken slightly, approximately 3-4 minutes.

Add the cashew powder to the pan, mix well to form a smooth and lump-free dough.

Once mixed, add the ghee and cardamom powder. Continue to cook on low heat, stirring constantly for about 5-8 minutes or until the mixture starts thickening and leaves the sides of the pan.
