Begin by roasting the cashew nuts in a pan over low heat for about 3-4 minutes until slightly golden and fragrant. Be careful not to burn them.
Allow the roasted cashew nuts to cool completely. Once cooled, transfer them to a blender or food processor and grind them into a fine powder. Do not over-blend as it might release the oils, turning them into a paste.
In a non-stick pan, add the powdered erythritol and coconut milk. Stir well to combine.
Place the pan on medium heat and continue stirring until the erythritol dissolves completely and the mixture starts to thicken slightly, approximately 3-4 minutes.
