Ingredients

  • 500 grams Greek yogurt
  • 500 ml Water
  • 2 tablespoons Olive oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fenugreek seeds
  • 1 pinch Asafoetida
  • 2 whole Dried red chilies
  • 10 leaves Curry leaves
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 teaspoon Salt
  • 2 tablespoons Cilantro leaves

Directions

Step 1

In a large bowl, whisk together the Greek yogurt and water until smooth, then add turmeric powder, ginger paste, garlic paste, and salt. Mix well and set aside.

Step 2

Heat olive oil in a large pan over medium heat. Add mustard seeds and let them splutter.

Step 3

Add cumin seeds, fenugreek seeds, asafoetida, and whole red chilies. Stir for a few seconds until the seeds are aromatic.

Step 4

Add curry leaves and sauté for a few seconds.

Step 5

Reduce the heat to low and carefully pour in the yogurt mixture, stirring continuously to prevent curdling.

Increase the heat to medium, continue stirring until the mixture comes to a gentle boil. This will take about 10-15 minutes.

Lower the heat and let the kadi simmer for another 10 minutes, stirring occasionally to ensure it doesn't stick to the bottom.
