Ingredients

  • 500 grams Bottle Gourd (grated)
  • 1 liter Unsweetened Almond Milk
  • 3 tablespoons Xylitol or Erythritol
  • 2 tablespoons Almond Flour
  • 1 teaspoon Cardamom Powder
  • 1 pinch Saffron Strands
  • 1 teaspoon Rose Water
  • 2 tablespoons Chopped Almonds
  • 2 tablespoons Chopped Pistachios
  • 1 tablespoon Ghee

Directions

Step 1

Peel and grate the bottle gourd. Squeeze out excess water using a muslin cloth or cheesecloth; this will help reduce the cooking time.

Step 2

In a heavy-bottomed saucepan, heat ghee over medium flame. Once melted, add the grated bottle gourd. Sauté for about 5-7 minutes or until the bottle gourd becomes slightly tender.

Step 3

Add the almond flour to the sautéed bottle gourd, stirring well to combine. Cook for another 2 minutes to incorporate the nutty flavor.

Step 4

Pour in the unsweetened almond milk into the saucepan. Increase the heat slightly and bring to a gentle boil, stirring occasionally.

Step 5

Lower the heat and let the mixture simmer for about 20-25 minutes. Stir often to prevent the kheer from sticking to the bottom of the pan.

Step 6

Add cardamom powder, xylitol or erythritol, and saffron strands to the kheer. Mix well, continuing to simmer for another 5 minutes until thickened to desired consistency.

Step 7

Remove the saucepan from heat and stir in the rose water for a fragrant touch.

Step 8

Garnish with chopped almonds and pistachios before serving. Serve the kheer warm or chilled, as per your preference.
