Ingredients

  • 1 large head Cauliflower
  • 1 cup Chicken broth
  • 2 tablespoons Tomato paste
  • 1 can (14 oz) Diced tomatoes
  • 1 medium Red bell pepper
  • 1 medium Onion
  • 3 cloves Garlic cloves
  • 1 teaspoon Ginger powder
  • 0.5 teaspoon Cayenne pepper
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut oil
  • 1 cup Frozen mixed vegetables
  • 1 teaspoon Fresh thyme

Directions

Step 1

Cut the cauliflower into florets and pulse in a food processor until the mixture resembles rice. Set aside.

Step 2

In a large pan, heat the coconut oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3 minutes until the onion becomes translucent.

Step 3

Add the diced red bell pepper to the pan and continue to cook for another 2 minutes.

Step 4

Pour in the tomato paste, stirring constantly, then add the diced tomatoes and cook for 5 minutes, allowing the flavors to meld together.

Add the chicken broth, ginger powder, cayenne pepper, bay leaf, salt, and black pepper to the pan. Stir well and allow the mixture to simmer for 3 minutes.

Stir in the riced cauliflower and frozen mixed vegetables. Combine everything thoroughly.

Cover the pan and reduce the heat to low. Allow the mixture to cook until the cauliflower is tender and the liquid is absorbed, approximately 10 minutes.

Remove from heat, discard the bay leaf, and stir in the fresh thyme.
