Ingredients

  • 2 cups Almond flour
  • 0.25 cups Coconut flour
  • 1 tablespoon Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 4 large Eggs
  • 0.25 cup Melted butter
  • 0.25 cup Warm water
  • 2 tablespoons Olive oil
  • 1 pound Ground chicken or beef
  • 1 small, diced Onion
  • 2 cloves, minced Garlic
  • 2 tablespoons Curry powder
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Xanthan gum
  • 0.5 cup Water
  • 1 unit Egg wash (1 egg beaten with 1 tbsp water)
  • 1 cup Crushed pork rinds

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 3

In a separate bowl, beat the eggs well, then whisk in the melted butter and warm water.

Step 4

Combine the wet and dry ingredients, mixing until a dough forms.

Step 5

Knead the dough briefly (1-2 minutes), then divide it into 8 equal parts and set aside.

Step 6

Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, sauté until onions are translucent.

Step 7

Add the ground chicken or beef to the skillet, cooking until no longer pink.

Step 8

Stir in curry powder, soy sauce, and xanthan gum. Gradually add 0.5 cup water, stirring until a thick curry mixture forms.

Step 9

Remove the curry filling from heat and allow it to cool slightly.

Step 10

Take one piece of dough and flatten it into a circle, about 4 inches in diameter.

Step 11

Place 2 tablespoons of curry filling in the center of the dough circle, then fold the edges over, sealing to form a bun. Repeat with the remaining dough and filling.

Step 12

Brush each bun thoroughly with egg wash, then roll it in crushed pork rinds for the coating.

Step 13

Place the buns on the prepared baking sheet and bake in the preheated oven for 25-30 minutes or until golden brown.

Step 14

Allow to cool slightly before serving. Enjoy your low-carb Japanese curry bread!
