Ingredients

  • 400 g Cauliflower rice
  • 2 Eggs
  • 50 g Grated parmesan cheese
  • 100 g Almond flour
  • 100 g Mozzarella cheese, cut into small cubes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp Garlic powder
  • 200 ml Olive oil

Directions

Step 1

Begin by preparing the cauliflower rice. If using fresh cauliflower, break it into florets and pulse in a food processor until it resembles rice grains. If using frozen cauliflower rice, simply defrost it according to package instructions.

Step 2

In a large mixing bowl, combine the cauliflower rice, eggs, parmesan cheese, almond flour, salt, pepper, Italian seasoning, and garlic powder. Mix until you have a homogenous mixture that holds together when pressed.

Step 3

Take a small handful of the mixture and flatten it in the palm of your hand. Place a cube of mozzarella cheese in the center and mold the mixture around it, forming a ball. Ensure the mozzarella is completely covered.

Step 4

Repeat with the remaining mixture and mozzarella cubes, placing each completed arancini onto a plate.

Step 5

Heat the olive oil in a deep frying pan over medium heat. The oil is ready when a small piece of the mixture sizzles when dropped in.

Step 6

Fry the arancini in batches, allowing each ball to cook for about 3-4 minutes per side or until golden brown and crispy. Use a slotted spoon to turn the arancini gently and ensure even cooking.

Step 7

Once cooked, transfer the arancini to a plate lined with paper towels to drain any excess oil.

Step 8

Serve the low carb rice balls hot, with a side of marinara sauce or a dip of your choice.
