Ingredients

  • 3 medium Zucchini
  • 1 lb Ground beef
  • 2 cloves Garlic
  • 1 tbsp Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Marinara sauce (sugar-free)
  • 1 cup Mozzarella cheese (shredded)
  • 0.25 cup Parmesan cheese (grated)
  • 1 tbsp Olive oil
  • 2 tbsp Fresh parsley (optional, chopped for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a mandoline or vegetable peeler, slice the zucchini lengthwise into thin strips about 1/8 inch thick. Set aside.

Step 3

In a large skillet over medium heat, add olive oil and minced garlic. Cook for 1-2 minutes until fragrant.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

Step 5

Stir in the Italian seasoning, salt, black pepper, and 1/2 cup of marinara sauce into the cooked beef. Remove from heat and let it cool slightly.

Lay out one zucchini slice on a clean surface. Place about 2 tablespoons of the beef mixture at one end of the slice. Roll tightly and place seam-side down in a greased baking dish.

Repeat with the remaining zucchini slices and beef mixture.

Pour the remaining 1/2 cup of marinara sauce over the zucchini roll ups in the baking dish.

Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
