Ingredients

  • 500 grams ground beef
  • 250 grams ground chicken
  • 1 large egg
  • 2 teaspoons salt
  • 1 teaspoon white pepper
  • 1 teaspoon baking powder
  • 125 milliliters ice water
  • 2 liters beef broth
  • 4 minced garlic cloves
  • 3 thinly sliced shallots
  • 2 chopped bok choy
  • 2 sliced green onions
  • 2 tablespoons soy sauce
  • 1 cut into wedges lime
  • 1 tablespoon fish sauce

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground chicken, and egg.

Step 2

Add the salt, white pepper, and baking powder to the meat mixture, and mix until well combined.

Step 3

Gradually add ice water to the mixture, about 20 milliliters at a time, kneading the mixture until it's elastic and smooth.

Step 4

Shape the meat mixture into 1-inch meatballs using your hands, or use an ice cream scoop for uniform size.

Step 5

In a large pot, bring the beef broth to a gentle simmer over medium heat.

Step 6

Add the minced garlic and sliced shallots to the broth, allowing them to infuse the broth for about 5 minutes.

Step 7

Carefully drop the meatballs into the simmering broth, making sure they do not overcrowd. Cook until the meatballs float to the surface, about 10-12 minutes.

Step 8

Once the meatballs are cooked, add chopped bok choy to the broth and cook for another 3 minutes until the greens are tender.

Step 9

Stir in the soy sauce and fish sauce, adjusting seasoning to taste if needed.

Step 10

To serve, ladle the soup into bowls, topping it with sliced green onions and a lime wedge. Enjoy hot.
