Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 zucchini, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Add beef cubes to the pot in batches, searing until browned on all sides. Remove and set aside.

Step 3

In the same pot, add onions, bell pepper, and garlic. Cook until the onions are soft and translucent, about 5 minutes.

Step 4

Stir in the paprika and caraway seeds, cooking for 1 more minute until the spices are fragrant.

Step 5

Return the beef to the pot and mix well, ensuring the beef is well coated with the spices.

Step 6

Add the beef broth, tomato paste, and bay leaf, then stir to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 90 minutes, stirring occasionally.

Step 8

After 90 minutes, add the chopped zucchini to the pot. Simmer uncovered for an additional 30 minutes or until the beef is tender and the sauce has slightly thickened.

Step 9

Season with salt and black pepper to taste.

Step 10

Remove the bay leaf, garnish with fresh parsley, and serve the goulash warm.
