Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a small bowl, combine the warm water and active dry yeast, stirring gently. Allow it to sit for about 5 minutes until it activates and becomes foamy.
In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Stir until well mixed.
In a separate bowl, whisk together the eggs, melted butter, monk fruit sweetener, and vanilla extract until smooth.
Pour the egg mixture into the dry ingredients, then add the activated yeast mixture. Stir until the dough comes together.
Turn the dough onto a clean, flat surface and knead gently for a couple of minutes to ensure even consistency.
Divide the dough into three equal portions. Roll each portion into a long rope, about 12 inches in length.
