In a large mixing bowl, combine soy sauce, Worcestershire sauce, liquid smoke, onion powder, garlic powder, black pepper, paprika, stevia or erythritol, and salt.
Add the ground turkey to the bowl and mix thoroughly with your hands or a spatula until the spices are evenly distributed throughout the meat.
Line a baking sheet with parchment paper. Using your hands, spread the turkey mixture evenly onto the parchment paper, pressing it down to about 1/4 inch thickness.
Preheat your oven to 175°F (80°C).
