Ingredients

  • 2 cans (5 oz each) canned tuna
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 ounce cream cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

1. Spiralize the zucchini into noodles using a spiralizer or cut them into thin slices using a mandoline. Set aside.

Step 2

2. Drain the canned tuna and set aside.

Step 3

3. Heat olive oil in a large skillet over medium-high heat. Add the zucchini noodles and sauté for 3-4 minutes until they are slightly softened. Remove from the skillet and set aside.

Step 4

4. In the same skillet, add the unsalted butter and let it melt over medium heat.

Step 5

5. Add heavy cream and cream cheese to the skillet and whisk until the cream cheese is melted and the mixture is smooth.

Step 6

6. Stir in the shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Continue to stir until the cheese is completely melted and the sauce is smooth.

Step 7

7. Add the drained tuna to the cheese sauce, and gently stir to combine.

Step 8

8. Return the zucchini noodles to the skillet and toss everything together gently, coating the noodles and tuna evenly with the sauce.

Step 9

9. Cook for another 2-3 minutes until everything is heated through and well combined.

Step 10

10. Garnish with fresh parsley before serving.
