  • 2 tablespoons Chia seeds
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Water

Directions

Step 1

Start by washing the strawberries thoroughly and removing the stems. Cut strawberries into quarters.

In a medium saucepan, combine the strawberries, lemon juice, erythritol, and water.

Place the saucepan over medium heat and cook, stirring occasionally, until the strawberries begin to release their juices and the erythritol dissolves. This should take about 5-7 minutes.

Use a potato masher or the back of a spoon to mash the strawberries to your desired consistency. Continue to cook for another 5 minutes, allowing the mixture to thicken slightly.
