Ingredients

  • 2 pieces Medium-sized zucchini
  • 2 tablespoons Olive oil
  • 2 tablespoons Sour cream
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Chives, chopped
  • 2 tablespoons Grated Parmesan cheese

Directions

Step 1

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

Step 2

Using a mandoline or a very sharp knife, slice the zucchinis into very thin, uniform slices, about 1/8-inch thick.

Step 3

In a large bowl, toss the zucchini slices with olive oil until they're evenly coated.

Step 4

Add onion powder, garlic powder, salt, black pepper, and grated Parmesan cheese to the bowl, and toss again to evenly coat the zucchini slices with the seasoning.

Step 5

Arrange the zucchini slices in a single layer on the prepared baking sheet, making sure none of the slices overlap.

Step 6

Place the baking sheet in the oven and bake for approximately 45-60 minutes, flipping the chips halfway through cooking time, until they are golden brown and crisp.

Step 7

Remove the chips from the oven and let them cool on the baking sheet for a few minutes.

Step 8

In a small bowl, mix together sour cream and chopped chives.

Step 9

Serve the cooled chips with the sour cream dip on the side for dipping.

Step 10

Enjoy your homemade low-carb sour cream & onion chips!
