Ingredients

  • 1000 grams Pork shoulder or pork belly
  • 50 grams Erythritol or your preferred low-carb sweetener
  • 60 ml Soy sauce
  • 30 ml White vinegar
  • 2 teaspoons Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Annatto powder (optional, for color)
  • 2 tablespoons Vegetable oil

Directions

Step 1

Slice the pork shoulder or pork belly into thin strips, about 1/4 inch thick. This will help the marinade penetrate the meat better.

Step 2

In a large bowl, combine erythritol, soy sauce, white vinegar, paprika, salt, black pepper, garlic powder, and annatto powder. Stir until erythritol is fully dissolved.

Step 3

Add the sliced pork to the marinade, making sure each piece is well coated. Massage the mixture into the pork to help absorption.

Step 4

Cover the bowl with plastic wrap and refrigerate the pork tocino for at least 6 hours, ideally overnight, to allow the flavors to permeate the meat.

Step 5

When ready to cook, heat the vegetable oil in a large non-stick frying pan over medium heat.

Step 6

Remove the pork from the marinade and place it in the pan. Discard the remaining marinade.

Step 7

Cook the pork for about 5-7 minutes on each side or until the meat is caramelized, cooked through, and has a nice char. Adjust the heat as necessary to prevent burning.

Step 8

Once cooked, remove the pork tocino from the pan and let it rest for a few minutes before serving.

Step 9

Serve hot with your favorite low-carb side, like cauliflower rice or a fresh vegetable salad.
