Ingredients

  • 1 cup Almond flour
  • 1.5 cups Mozzarella cheese, shredded
  • 2 tablespoons Cream cheese
  • 1 teaspoon Baking powder
  • 1 large Egg
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Garlic powder
  • 20 pieces Pepperoni slices
  • 0.5 cup Marinara sauce
  • 1 pinch Salt
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine 1.5 cups of shredded mozzarella cheese and 2 tablespoons of cream cheese. Microwave on high for 1 minute, stir, then microwave for an additional 30 seconds until the mixture is smooth and melted.

Step 3

Add 1 cup of almond flour, 1 teaspoon of baking powder, 1 large egg, 1 teaspoon of Italian seasoning, 0.5 teaspoon of garlic powder, and a pinch of salt to the cheese mixture. Mix well until a dough forms.

Step 4

On a sheet of parchment paper, place the dough and cover with another sheet of parchment. Roll the dough into a rectangle approximately 1/4 inch thick.

Remove the top parchment paper and place 20 pepperoni slices evenly over the dough.

Carefully roll the dough into a log, starting from one of the shorter ends, using the parchment paper to help guide the roll.
