Ingredients

  • 2 cups raw hazelnuts
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup erythritol or sugar substitute
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 2 tablespoons coconut oil
  • 0.5 cup unsweetened almond milk

Directions

Step 1

Preheat your oven to 350°F (175°C). Spread the raw hazelnuts evenly on a baking sheet.

Step 2

Roast the hazelnuts in the preheated oven for about 10 minutes or until the skins appear cracked and the nuts are golden.

Step 3

Remove the hazelnuts from the oven and allow them to cool slightly. Place them in a kitchen towel and rub vigorously to remove most of the skins. This step doesn't need to be perfect.

Step 4

Transfer the peeled hazelnuts to a food processor. Process until the nuts turn into a smooth, creamy nut butter, which may take 5-10 minutes. Scrape down the sides as needed.

Add the unsweetened cocoa powder, erythritol, vanilla extract, salt, coconut oil, and almond milk to the hazelnut paste. Continue processing until everything is well combined and smooth. Adjust the sweetness with more erythritol if desired.
