  • 0.25 teaspoon Baking powder
  • 3 large Egg
  • 2 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 slice Cheddar cheese slice
  • 1 slice Ham slice
  • 1 tablespoon Cream cheese

Directions

Step 1

In a small microwave-safe bowl, combine almond flour, baking powder, 1 beaten egg, and a pinch of salt.

Step 2

Melt 1 tablespoon of butter in the microwave, then mix it into the almond flour mixture until smooth.

Step 3

Microwave on high for 90 seconds. Carefully remove the bowl from the microwave and let cool slightly.

Once cooled, gently run a knife around the edges of the bowl to release the muffin. Cut the muffin in half horizontally.

Beat the remaining 2 eggs in a bowl with a pinch of salt and black pepper.

Step 7

Pour the beaten eggs into the pan and cook until they're firm enough to flip. Cook until set, then remove from the pan.

Step 8

In the same pan, warm the ham slice until heated through.

Step 9

To assemble your low carb McMuffin, spread cream cheese on the cut sides of the muffin.

Step 10

Layer the cheese slice, egg, and ham between the two halves of the muffin.
