Ingredients

  • 150 grams Maize flour (cornmeal)
  • 50 grams Almond flour
  • 100 grams Cheddar cheese, grated
  • 30 grams Butter
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 120 milliliters Water

Directions

Step 1

Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

Step 2

In a medium saucepan, melt the butter over medium heat. Add water and bring to a simmer.

Step 3

Reduce the heat to low and add the maize flour and almond flour. Stir continuously until the mixture forms a thick paste and starts to pull away from the sides of the pan, about 3-4 minutes.

Step 4

Remove from heat and allow to cool slightly. Gradually stir in the grated cheese, salt, baking powder, garlic powder, onion powder, and paprika until fully combined.

Step 5

Add the egg and mix thoroughly until the dough is smooth and elastic.

Step 6

Transfer the dough to a piping bag fitted with a large star nozzle. Pipe small mounds onto the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 20-25 minutes until the puffs are golden brown and crisp.

Step 8

Allow to cool slightly before serving. Enjoy these deliciously low-carb maize puffs as a light snack or appetizer!
