Ingredients

  • 1 cup Chopped almonds
  • 1 cup Pecans, slightly crushed
  • 0.5 cup Sunflower seeds
  • 0.5 cup Pumpkin seeds
  • 1 cup Unsweetened shredded coconut
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseed meal
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Sea salt
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 0.25 cup Sugar-free maple syrup

Directions

Step 1

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the chopped almonds, pecans, sunflower seeds, pumpkin seeds, and shredded coconut.

Step 3

Add the chia seeds, flaxseed meal, cinnamon, and sea salt to the nut mixture. Stir well to ensure an even distribution of spices.

Step 4

In a smaller bowl, mix together the vanilla extract, melted coconut oil, and sugar-free maple syrup.

Step 5

Pour the wet ingredients over the dry ingredients and stir until all the dry ingredients are coated.

Step 6

Spread the mixture evenly onto the prepared baking sheet, pressing it down lightly to form small clusters.

Step 7

Bake in the preheated oven for 20-25 minutes, stirring once halfway, until the granola is golden brown and fragrant.

Step 8

Remove from the oven and allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.

Step 9

Once cooled, break into clusters and store in an airtight container at room temperature for up to two weeks.
