Ingredients

  • 15 large Elderflower heads
  • 1 liter Boiling water
  • 400 grams Granulated erythritol or your preferred low carb sweetener
  • 2 large Lemons
  • 50 grams Citric acid

Directions

Step 1

1. Begin by gently shaking the elderflower heads to remove any insects and debris. Do not wash them to preserve the natural aroma unless absolutely necessary.

Step 2

2. Peel the zest from the lemons using a vegetable peeler, ensuring to avoid the bitter white pith. Slice the lemons thinly.

Step 3

3. In a large heatproof bowl, place the elderflower heads, lemon zest, lemon slices, and stir in the citric acid.

Step 4

4. Pour the boiling water over the ingredients in the bowl and submerge everything. Cover the bowl with a clean cloth and leave it to steep in a cool, dark place for 24 hours.

Step 5

5. After steeping, strain the mixture through a fine sieve or muslin cloth into a pot, discarding the solids.

Step 6

6. Add the erythritol or sweetener of your choice to the infused liquid, and heat gently over medium heat while stirring until completely dissolved. Do not boil the mixture as overheating can damage the delicate floral notes.

Step 7

7. Once dissolved, remove from heat and allow to cool slightly.

Step 8

8. Pour the syrup into sterilized bottles using a funnel. Seal with airtight lids and store in the fridge.

Step 9

9. To serve, dilute the syrup to taste with water, sparkling water, or add a splash to your favorite cocktail. Enjoy your low carb elderflower drink!
