Ingredients

  • 2 cups blanched almond flour
  • 2 teaspoons baking powder
  • 1/3 cup granulated erythritol
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 4 ounces cream cheese
  • 3 cups mozzarella cheese, shredded
  • 2 pieces large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9 inch baking dish with parchment paper.

Step 2

In a medium-sized bowl, combine almond flour, baking powder, 2 tablespoons of erythritol, 1 teaspoon of cinnamon, xanthan gum, and salt.

Step 3

In a microwave-safe bowl, combine cream cheese and mozzarella cheese. Microwave on high in 30-second intervals, stirring in between, until the cheese is completely melted and combined.

Add the melted cheeses, eggs, and vanilla extract to the bowl with the dry ingredients. Mix until you form a cohesive dough.
