  • 1 pound Boneless skinless chicken breast

  • 2 tablespoons Butter
  • 3 Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 teaspoon Xanthan gum
  • 2 cups Almond flour
  • 1 large Egg
  • 2 cups Shredded mozzarella cheese
  • 1 teaspoon Baking powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Season the chicken breasts with salt and pepper.

In a large skillet over medium-high heat, add olive oil. Cook the chicken breasts until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove from the skillet and let cool, then chop into bite-sized pieces.
