Ingredients

  • 1 pound chicken breast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup almond flour
  • 0.25 cup coconut flour
  • 2 teaspoons baking powder
  • 3 large eggs
  • 0.5 cup unsweetened almond milk
  • 4 tablespoons butter
  • 1 teaspoon xanthan gum

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Cut the chicken breast into small bite-sized pieces and season with garlic powder, onion powder, paprika, salt, and black pepper.

Step 3

In a large pan, melt 2 tablespoons of butter over medium heat and cook the chicken pieces until golden brown and cooked through, about 6-8 minutes. Remove from heat and set aside.

Step 4

In a bowl, whisk together the almond flour, coconut flour, baking powder, and xanthan gum.

Step 5

In a separate bowl, beat the eggs and then mix in the unsweetened almond milk until combined.

Step 6

Combine the dry and wet ingredients, stirring until a thick batter forms.

Step 7

Melt the remaining 2 tablespoons of butter and fold it into the batter.

Step 8

Scoop spoonfuls of the batter onto the prepared baking sheet to form mini biscuit shapes. Use wet hands or a spoon to flatten and shape them as needed.

Step 9

Bake in the preheated oven for 10 minutes or until slightly golden.

Step 10

Remove from the oven and allow the bread to cool slightly, then slice each mini biscuit in half horizontally.

Step 11

Place a piece of cooked chicken between the halves of each biscuit to assemble the chicken minis.

Step 12

Serve warm and enjoy your low carb homemade chicken minis.
