Preheat your oven to 375°F (190°C). Place a baking tray in the middle rack and lightly grease four 6-ounce ramekins with unsalted butter.
In a medium mixing bowl, whisk together the egg yolks, lemon juice, lemon zest, vanilla protein powder, almond flour, and 1 tablespoon of sweetener until smooth. Set aside.
In a large, clean, and dry mixing bowl, add the egg whites and cream of tartar. Use an electric mixer to beat the egg whites on medium speed until soft peaks form.
Gradually add the remaining 2 tablespoons of sweetener to the egg whites, 1 tablespoon at a time, while continuing to beat. Increase the mixer speed to high and beat until stiff, glossy peaks form.
