Ingredients

  • 1 large head Cauliflower
  • 2 cups Broccoli florets
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh basil
  • 1 tablespoon Fresh dill
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Remove the leaves and the stem from the cauliflower. Cut the cauliflower into chunks and grate it using a box grater or pulse in a food processor until it resembles the size and texture of rice. Set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the garlic, minced, and sauté for about 1 minute until fragrant.

Step 3

Add the cauliflower rice to the skillet, stir well to coat it with oil, and cook for about 5 minutes, stirring occasionally, until it begins to soften.

Step 4

Meanwhile, in a pot, bring water to a boil and blanch the broccoli florets for 2 minutes. Drain and add them to the skillet with the cauliflower rice.

Step 5

Add the parsley, basil, and dill to the skillet. Stir well to combine all the ingredients.

Step 6

Season with salt and black pepper, and continue to cook for another 5 minutes until the cauliflower rice and broccoli are tender.

Step 7

Remove from heat and drizzle with lemon juice. Stir once more to combine.

Step 8
