Ingredients

  • 2 racks Rack of lamb
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh rosemary
  • 2 tablespoons Fresh thyme
  • 4 cloves Garlic cloves
  • 1 teaspoon Lemon zest
  • 1 cup Almond flour
  • 3 tablespoons Olive oil
  • 2 tablespoons Dijon mustard

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the racks of lamb dry with paper towels and season them all over with salt and black pepper.

Step 3

In a food processor, combine rosemary, thyme, garlic, and lemon zest. Pulse until finely chopped.

Step 4

Add almond flour to the herb mixture and pulse to combine.

Step 5

Add 2 tablespoons of olive oil and pulse again until the mixture comes together like coarse breadcrumbs.

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
