Ingredients

  • 4 pieces white fish fillets
  • 1 cup almond flour
  • 0.5 cup finely grated Parmesan cheese
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh thyme
  • 1 teaspoon lemon zest
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil
  • 4 lemon wedges

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a medium bowl, combine almond flour, Parmesan cheese, chopped parsley, dill, thyme, lemon zest, garlic powder, salt, and pepper. Mix well to combine.

Step 3

In a shallow bowl, beat the egg until blended.

Step 4

Pat the fish fillets dry with paper towels to remove any excess moisture.

Step 5

Dip each fillet in the beaten egg, ensuring it is fully coated, then transfer to the almond flour mixture and press to adhere the mixture to both sides of the fish.

Step 6

Place the crusted fish fillets on the prepared baking sheet.

Step 7

Drizzle olive oil over the top of each fillet to help the crust crisp up while baking.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the fish is cooked through and the crust is golden brown and crispy.

Step 9

Serve the herb-crusted baked fish with lemon wedges for squeezing over the top just before eating.
