Grate the zucchini using a box grater. Place the grated zucchini in a clean dish towel and squeeze out as much moisture as possible. Set aside.
In a food processor, pulse the broccoli florets and mushrooms until finely chopped. Transfer the mixture to a large mixing bowl.
Peel and grate the carrot. Add it to the bowl with the broccoli and mushroom mixture.
Finely chop the green onions and add them to the mixing bowl along with the squeezed zucchini.
