Ingredients

  • 2 Celery stalks, chopped
  • 1 medium Bell pepper, chopped
  • 1 medium Zucchini, chopped
  • 1 cup Cauliflower, chopped into small florets
  • 2 cups Spinach, fresh
  • 14.5 oz Diced tomatoes, canned
  • 4 cups Chicken broth
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the Italian sausage to the pot and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.

Remove the sausage from the pot with a slotted spoon and set aside, leaving the rendered fat in the pot.
