  • 2 medium carrots, diced
  • 1 large zucchini, diced
  • 1 medium green bell pepper, chopped
  • 2 cups broccoli florets
  • 1 pound ground beef or turkey
  • 14.5 ounces canned diced tomatoes
  • 8 cups beef or chicken broth
  • 1 teaspoon fresh thyme, chopped
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and minced garlic, stirring until the onion is translucent, about 5 minutes.

Stir in the diced celery, carrots, zucchini, bell pepper, and broccoli. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
