Ingredients

  • 1 head cauliflower
  • 2 medium turnip
  • 1 pound beef stew meat
  • 2 tablespoons olive oil
  • 1 large, chopped onion
  • 1 large, sliced carrot
  • 2 sliced celery stalk
  • 3 minced garlic cloves
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the cauliflower into small florets to mimic the size of diced potatoes.

Step 2

Peel and dice the turnips into 1-inch cubes.

Step 3

In a large pot, heat the olive oil over medium-high heat.

Step 4

Add the beef stew meat and sear until browned on all sides, about 5-6 minutes. Remove the meat and set aside.

Step 5

In the same pot, add the chopped onion, sliced carrot, and celery. Sauté for about 5 minutes until the vegetables begin to soften.

Step 6

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 7

Return the seared beef to the pot and stir in the beef broth and tomato paste.

Step 8

Add the bay leaf, thyme, rosemary, salt, and black pepper. Stir to combine.

Step 9

Bring the stew to a boil, reduce the heat to low, and let it simmer uncovered for 60 minutes.

Step 10

Add the cauliflower florets and turnip cubes to the pot. Stir well to incorporate them into the stew.

Step 11

Continue to simmer for another 30 minutes or until the turnips are tender and the stew has thickened.

Step 12

Discard the bay leaf before serving. Adjust seasoning with additional salt and pepper if needed.

Step 13

Serve hot, garnished with extra fresh herbs if desired.
