Ingredients

  • 2 pounds pork bones
  • 12 cups water
  • 1 medium white onion
  • 4 garlic cloves
  • 1 inch piece ginger
  • 1 medium daikon radish
  • 1 medium carrot
  • 2 cups bok choy
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 green onions
  • 0.5 cup cilantro
  • 1 lime

Directions

Step 1

Rinse the pork bones under cold water to remove any bone fragments. Place the bones in a large stockpot.

Step 2

Fill the pot with the 12 cups of water. Bring to a boil over high heat, then reduce to a simmer. Skim off any foam that rises to the surface.

Step 3

Peel and halve the white onion, peel the garlic cloves and ginger. Add them to the pot with the bones.

Step 4

Let the bones simmer for at least 2 hours, adding more water if necessary to keep the bones submerged.

Step 5

While the bones are simmering, peel and slice the daikon radish and carrot into half-inch thick rounds.

Step 6

After the bones have simmered for 2 hours, add the daikon and carrot to the pot. Continue to simmer for an additional hour.

Once the cooking time is complete, remove the bones and vegetables from the pot using a slotted spoon.

Strain the broth through a fine mesh strainer to remove any remaining solids. Return the clear broth to the pot.
