  • 3 garlic cloves, minced

  • 1 medium bell pepper, diced
  • 14 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium zucchini, diced
  • 1 cup cauliflower rice
  • 15 ounces canned black soybeans, drained

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Add the diced onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the ground beef, breaking it apart with a spatula until browned evenly, about 8 minutes.
