Ingredients

  • 8 pieces large eggs
  • 0.5 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 8 slices cooked bacon, chopped
  • 1 medium bell pepper, chopped
  • 2 cups spinach, fresh
  • 4 pieces green onions, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with olive oil.

In a large skillet over medium heat, add the olive oil. Once hot, add the chopped bell pepper and cook for 3-4 minutes until softened.

Add the fresh spinach to the skillet and cook for another 2-3 minutes until wilted. Remove the skillet from heat and set aside.
